Dressing Delight

I generally consider myself to be a smart cookie. And yet, sometimes I am so dim that I am amazed I can remember how to tie my own shoes.

I love salad but generally I'm far too lazy to make it myself. All that rinsing and chopping? Oy. And yet.....In my never-ending efforts towards better living through healthy food, I have been working to combat my natural sloth-like tendencies and break my distaste for salad preparation.
Tonight I made pork chops with spinach salad on the side. The recipe called for marinating the chops in a balsamic vinaigrette -which can, of course, also be used as a delightful salad dressing.

WHY did no one tell me it was so easy to make this creamy, dreamy dressing at home??


Balsamic-Rosemary Vinaigrette

1/3 cup balsamic vinegar
1 tablespoon Dijon mustard
1 small garlic clove
1 tablespoon fresh rosemary leaves (or 1/4 teaspoon dried)
2 tablespoons water
1/2 teaspoon coarse salt,
1/4 teaspoon ground pepper
1/2 cup extra-virgin olive oil

In a blender, combine vinegar, Dijon mustard, garlic clove, rosemary, water, salt, and pepper. Blend until smooth. With machine running, add 1/2 cup extra-virgin olive oil in a thin stream; blend until creamy. (To store, refrigerate, up to 2 weeks.)

I served this on my spinach salad, tossed it all with a little tomato and topped with herbed goat cheese.

Sounds yummy! I'm excited. I only wish I could go to the Farmers Market this Saturday. Maybe next weekend.

ooh this looks good. I love that the recipe doesn't call for any nuts, as I am an avid nut hater, maybe b/c I'm allergic.

Oh and we tried your choc. chip cookie recipe this weekend, we made a full batch to bring to our neighbors, and instead, I ate their portion too ;). We didn't have any parchment paper though - do you think that makes a big difference??

Go and enjoy that Farmers Market for me - oh that place was fun!

That sounds yummy! I might just have to try it! Oh, and I did try your chocolate chip cookies via Sara and they were delightful! If I wasn't trying to clear my house of the ever growing amount of junk food I would totally try making them myself this week.

Maybe Alec and I will head to the Farmers Market Saturday. Nick and Lyssa will be visiting family so Alec and I have 4 whole days full of Mommy/Alec dates to plan.

I know! We are so excited for the Farmer's Market. We can't decide what to have for breakfast; a yummy breakfast burrito or the sausage egg sandwich? Both are to die for in my opinion! Maybe we will see you there.

Oh I so cant wait for the farmers market either and for cinco de mayo! last year it was so fun! that dressing looks so YUMMY!

That dressing sounds so good! I'll have to try it sometime, and YES I'm stoked for the Farmers' Market. BTW, thanks for your advice on baby bedding. Thanks to you (and others) we'll save a ton of money! (I'm nixing buying a quilt and bumpers). When I told Matt my favorite bedding set would cost $250 w/ tax and shipping, he must've thought I was crazy! (But he didn't say anything.) Haha! Maybe I'll head over to PBK during my lunch break to see if there's any good sales. Thanks again!
